Managing Partner Jimmy Lawrence now oversees the restaurant's day-to-day operations, and his aim is to modernize the experience at Chicago Chop House. He's utilizing the skills of veteran employee Executive Chef Hector Villegas--who has been with Chicago Chop House since 1989--who is instrumental in preserving the restaurant’s true "chop house" status by continuing to butcher all of the restaurant’s meat in-house, and pioneering steak trends, such as dry aging.
