Modern with a dash of flashy light fixtures and luxury furnishings throughout the space, Jean Georges Steakhouse attracts the usual highrollers coming into Vegas. And the menu beyond steaks, of course, is what you'd expect from a chef-driven steakhouse.
For its grand opening, the restaurant's featuring a three-course, prix-fixe deal that's $85 per person. Guests get choices such as Japanese wagyu beef carpaccio, Chilean sea bass, grilled prime filet mignon and New York-style cheesecake.
A la carte selections, beyond steak, range from porcini-crusted salmon with warm vinaigrette and herbs to soy-glazed short rib. All steaks and chops are grilled over apricot wood and mesquite and finished with rendered beef fat, sea salt and cracked pepper.
