The owners of Silver Saddle Steak House love mesquite so much that the bar top in its Tappadero Lounge was carved from a large mesquite tree milled in Trincheras, Mexico. Mesquite grilling is a Southwestern tradition, and here all steaks, ribs and chicken are cooked in a custom-designed, steel-and-brick mesquite wood grill and pit.

Steak choices are the usual cuts, from a 10-ounce New York strip to the Southwestern classic T-bone of 16 ounces. But for those wanting something a little fancier, opt for the prime rib. It comes several ways: There's the cowboy cut in 16 ounces. King comes in 12 ounces, and Queen is 10 ounces. Prime rib also comes "surf and turf" style by ordering the 10-ounce prime rib and adding Australian lobster tail or crab legs.
