Prime + Proper - Detroit
The butcher shop serves as a centerpiece at Prime + Proper, a modern steakhouse at the base of the Capitol Park Loft building in Detroit. The dry-aging vault is visible through a full-length, floor-to-ceiling custom window, so guests may see all the action.
It also showcases a variety of exclusive dry-aged proteins from select farms that you won't find anywhere else. Prime + Proper butchers work closely with carefully chose purveyors, ensuring the quality of meats is pristine year-round. They age USDA prime beef for no less than 28 days, USDA prime lamb for no less than 14 days, and seven days for whole ducks.
The menu is comprised of steaks and chops, seafood entrees, and a raw bar and caviar. There is also buttermilk fried chicken, a dry-aged prime burger and sweet potato gnocchi on the menu.
