Rare Steakhouse - Madison
Wife-and-husband team Jack and Julie Sosnowki decided to add a steakhouse to their little empire of Madison, Wis.-based restaurants under the banner of Noble Chef Hospitality. Rare, located downtown, came about because the Sosnowkis felt the area was lacking in an upscale steakhouse serving prime steaks in a modern setting.
The native Madisonians, in fact, toured steakhouses throughout the country before developing the Rare concept. The restaurant specializes in local ingredients, USDA prime steaks from Allen Brothers and an exceptional wine list.
The meat is dry aged in-house, then seared in a custom-built, 1800 degree infrared broiler. All steaks are served with signature au jus, and demi-glaze is served with filets. Cuts range from an 18-ounce Kansas City strip to a 32-ounce prime Chateaubriand cut for two.
Non-steak diners will appreciate options such as Tuscan-style brick chicken, seasonal vegetarian farmers market plate and pan-roasted Scottish salmon.
