Red Ash Italia - Austin
Red Ash Italia embraces traditional Italian cuisine from the northern and southern regions. Chef/owner John Carver's menu is slick and sophisticated, offering seafood, steak, pastas and more, much of which is cooked in the custom-built, wood-burning grill, oven and plancha. Red ash is released from the live wood fires, which is the inspiration for the restaurant’s name.
There are plenty of highlights on the menu, beginning with a nice range of starters and small plate offerings. Three types of crudo (red snapper, charred tuna, thin sliced beef carpaccio) are ideal for lighter appetites, while wood-roasted meatballs, small butter clams and hot & crispy country Italian bread topped with olive oil salmoriglio bode well for heartier beginnings.
Chef Carver’s menu also features fresh handmade pastas, locally sourced prime meats (50-day, dry-age Porterhouse, double-cut, bone-in filet) roasted on the wood-burning grill and plancha and an abundance of seasonal fresh vegetables. During happy hour, guests may take advantage of deals on food and drink in the bar, from special prices on small pastas to $2 off on select glasses of wine.
Italian desserts are prepared fresh daily in the Red Ash pastry kitchen. The wine list includes an array of specially selected Old and New World wines from the finest winemakers of Italy, Spain, France, Argentina, Chile, California, Oregon and Washington.
