The STK brand relishes in the fact that it's not a conventional steakhouse concept. While polished and offering premium dishes, a wine menu and more, it caters to a stylish, uber-trendy crowd.
But as the New York transplant pushes west, it changes with its audience. At the Denver outpost, it offers the same sleek setting resembling a posh lounge. Its patrons, while well dressed, are a bit more casual than what you'll find in Manhattan or Miami.
Steaks are categorized as "small" (filet medallion, skirt steak), "medium" (sirloin, bone-in filet) and "large" (Porterhouse, ribeye) and accompaniments consist of dishes like foie grass, truffle butter and jalapeno onions. Nine steak dishes includes entrees such as spiced duck breast, roasted Dover sole and free range chicken.
