After enjoying the popovers, you can have at the meat of the menu, which is, undoubtedly, the reason most of us would choose to go to BLT Prime. All beef at BLT Prime is USDA prime or 100% naturally raised certified Black Angus. There are the standard crowd-pleasers, as well as a few slightly off-center – and very, very good – offerings. For instance, the Cowboy is a marbled piece of selected beef short loin, though the exact type of steak is subject to change; if it’s the first two or so cuts, it’s a Porterhouse; if it’s from the last two or so cuts, it’s a T-bone. There’s also a hangar steak, which on the steer hangs between the rib and the loin; it’s a hugely flavorful piece of meat that requires a good chef to prepare correctly. Of course, it’s prepared correctly at BLT Prime.
“New York Magazine” recommends the New York strip steak and says that BLT Prime is right for you if you have a “taste for beef, lots of sauces and endless varieties of potatoes.”
There is a very good selection of oysters, and you’ll find a seafood entrée or two, but BLT Prime is basically all about the beef…and the wine. BLT Prime has won Wine Spectator awards for the sommeliers in 2014, 2015 and 2016. The wine list offers many glasses from the bottles, and the wine comes from a very wide geographic range, including an exceptionally broad selection of California reds.
