"Top Chef" host and judge Tom Colicchio boasts a slick, modern steakhouse that's located on the atrium of the Mirage hotel. The 220-seat restaurant focuses on antibiotic-free animals raised by purveyors committed to time-honored farming practices and heritage breeds. The meats are honored by being prepared entirely over an open flame--from wood-burning ovens to charcoal grills.
Heritage steaks include a 28-day, dry-aged, 32-ounce, bone-in ribeye, Australian Wagyu flatiron and dry-aged pork loin. Those looking for steak alternatives may order dishes such as the duck breast, spice-roasted lobster and grilled Mediterranean sea bass.
There's no lunch menu, but the lounge opens at 2 p.m., so guests may get a headstart with snacking portions of house-made beef jerky, brisket sliders and lobster hush puppies.
