Eddie Merlot's - Louisville
Eddie Merlot's is very wine focused and contemporary in style. It was founded by Bill Humphries, a well-known wine connoisseur who regularly selected the wine for his corporate dining companions. One such companion named Ed took a liking to Humphries' merlot selections, so when the latter opened his first steakhouse in Columbus, Ohio, he named it in honor of his biggest fan. Humphries went on to open locations in a number of cities in the Midwest and South, including this prominent outpost in Louisville, Ky.
Eddie Merlot's specializes in prime-aged steaks and fresh seafood in addition to fine wines. All steaks are aged a minimum of 21 days, hand-selected and primarily cut in-house. They range from a 16-ounce prime ribeye to reserve cuts like Greg Norman's signature wagyu.
Non-meat options include vegetarian pan-seared gnocchi, cedar-roasted salmon and crab-stuffed shrimp. All dressings for the salads are made in house. .
