It's a method that's worked for them all these decades, notwithstanding highly personalized hospitality. In addition to Texas Cattle Company, Talk of the Town Restaurant Group is also behind Charley's Steak House, Fishbones, Moonfish and Vito's Chop House.
The restaurant group has even created a foundation, Round Up for Charity, and each month they donate proceeds to a local nonprofit organization in central Florida. All of the restaurants ask guests to round up their checks to the nearest dollar. All of the costs of running the foundation are paid for by restaurant group, so that 100 percent of the money collected goes directly to the charity.
As far as the menu at Texas Cattle Company, steaks, chicken, chops and fresh fish are all cooked over a pit. Highlights include double chicken breasts marinated in citrus, cedar plank salmon and a 28-ounce, dry-aged Porterhouse.
Those with especially voracious appetites may take the "5 Pound Texas Challenge" and devour the five-pound USDA prime sirloin, one roll and a house salad within one-and-a-half hours. Those successful with get their meal comped and a free t-shirt; if not, it's $80.
