For Colorado, this means a pristinely fresh assortment of produce, hearty mountainous fare and of course, lamb. Here, lamb is a small plate star, making it a great shareable appetizer for a group. Lamb chops come with roasted red pepper and carrot puree, which lends a bright luster to the dish, along with an orange-shoyu demi for a bit of an acidic punch.
