Sam Marvin (who owned and operated the much-celebrated Los Angeles restaurant Bottega Louie) opened Echo & Rig Butcher and Steakhouse as an alternative to what he considered overpriced and over-masculinized steakhouses.

"Butchering is a lost craft and skill, and one that was highly respected,” notes Marvin on his web site. “[Echo & Rig Butcher Shop] ... will be a place to stop by on your way out and bring home tomorrow night’s dinner or pop in and have Trevor help you create a great dinner as you head home from work. Either way, we have no doubt that people will be eating the best meats possible and know a bit more about it before they prepare and cook it.”
For those who dine at the restaurant, all of the steaks are cooked over red oak and served with home-made garlic chips and mushroom Rockefeller. Selections range from a skirt steak to Bavette to a New York strip.
